I'm going to share one of our favorite recipes and one of the recipes that we use all the time. I have shared it before, but I deleted that post and I want to share it again in a better format! Something that is easier to follow if you would like to use this recipe!
This isn't my recipe, I found it online, but I can't remember where I found it. If the original owner comes across this post, kudos to you because you created an amazing recipe!
These are the amounts that we use for a family of six. You can totally alter the amount of ingredients for the amount of people that you are feeding.
Here's what you need:
3-5 Chicken Breasts
1-2 sleeves of ritz crackers. Off brands work too.
2 eggs
2 tbsp of water
1-1 1/2 sticks of butter.
Season Salt
Garlic Powder
Basil
Paprika
Gallon Size Ziplock
Dish For Egg Wash
Jelly Roll Pan or Baking Dish with Sides
Aluminum Foil
Cut up the chicken into tenders or any size you choose. Once chicken is cut up, place crackers in a bag and crush them into fine crumbs. It's okay if you have some bigger pieces, but if they are too big you will have a hard time with them staying on the chicken. Preheat your oven to 350 degrees. Once you have the cracker crumbs, make an egg wash by cracking the eggs and adding the water. Mix the water and the eggs together. You will want to place the egg wash in something that you can dip the chicken in. Once you have dipped the chicken in the egg wash place the chicken in the bag with the crumbs. Once you have five or six pieces of chicken in the bag shake it up so the cracker coating gets on the chicken. After getting the cracker coating place chicken on the jelly roll pan or baking dish with sides. Melt butter and pour over the chicken in the pan. Add the above spices just to taste. I liberally sprinkle the seasonings over the chicken. Cover chicken with foil and put it in the oven. You will want to cook the chicken for 30 minutes covered with the foil and 15-20 minutes uncovered. Just make sure that after those last 15-20 minutes the chicken is cooked all the way! Wouldn't want you to eat uncooked chicken! If it isn't cooked after that 15-20 minutes, leave it in the oven until fully cooked!
We usually pair ours with mashed potatoes and a green veggie! The chicken also tastes great with honey mustard! This can be kind of a lengthy process, but it is totally worth it! Trust me! If you do end up trying it, let me know how you like it! :)
